This page will feature recipies that you would need more advanced appliances.

These recipes are ones that can be made in the kitchen of a college apartment!

Chicken Avocado Salad

Ingredients

  • 2 Medium sized Chicken Breasts
  • 1 Large Avocado
  • 1 Tbsp of Greek Yogurt
  • 2 Tsps of Garlic Powder
  • 2 Tsps of Chili Powder
  • 2 Tsps of Sea Salt
  • 1/3 cup of Chopped Red Onion
  • Optional:Bread, Salad Base, and Crackers

Directions

  1. Preheat oven to 400 degrees fahrenheit.
  2. Start by adding half of the spice mix and half of the red onions onto the chicken breasts in a dish.
  3. Bake chicken for 20 minutes.
  4. When chicken is fully cooked, mix together the avocado, greek yogurt, and the remaining spices.
  5. Add in your chicken and mix well.
  6. Serve on bread, in a salad, or with crackers.
  7. Enjoy!

Chicken Enchiladas

Ingredients

  • 2 Large Chicken Breasts
  • 1 Packet of Taco Seasoning
  • 1-1 1/3 cup of Salsa
  • 1 Can of Enchilada Sauce
  • Tortillas
  • Shredded Cheese

Directions

  1. Place chicken breasts into a crockpot.
  2. Top with taco seasoning and salsa.
  3. Let cook for 2-3 hours on high or 6-8 hours on low.
  4. Once fully cooked, shred your chicken.
  5. Preheat oven to 375 degreed fahrenheit.
  6. Place the chicken filling inside of your tortillas.
  7. Roll and place in a 9x13 baking dish
  8. Top with enchilada sauce and bake for 10 minutes in the oven.
  9. Remove from oven and sprinkle with your shredded cheese.
  10. Bake again for another 10 minutes.
  11. Remove from oven.
  12. Enjoy!

Hot Honey Chicken Bowl

Ingredients

  • 1 Tbsp of Avocado oil
  • 2 Medium Boneless Chicken Breasts
  • 1/3 Cup of Honey
  • 1/4 cup of Hot Sauce Recommended:Burman's Hot Sauce
  • 1 Tsp of Paprika
  • 1 Tsp of Adobo
  • 1 Tsp of Pepper
  • 2 Tsp of Minced Garlic
  • 1 Tsp of Onion Powder
  • 1 Tsp of Lemon Pepper
  • 1 Medium Avocado, sliced
  • 2 Cups off Cooked Rice *Use Quinoa as a rice substitution

Directions

  1. Cube your chicken.
  2. Season your chicken with your paprika, adobo, lemon pepper, garlic powder, and onion powder.
  3. Pour you oil into a pan and heat chicken until cooked.
  4. With the chicken still in your pan, add in your hot sauce and honey and cook for a few minutes.
  5. Remove chicken from pan and add your rice to the pan.
  6. Mix your rice with the leftover spice from the chicken.
  7. Remove rice and serve with a side of avocado.
  8. Enjoy!

Feta Tomato Pasta

Ingredients

  • 2 Pints of Cherry Tomatoes
  • 8 oz Block of Feta Cheese
  • As many Cloves of Garlic as you want
  • 1/2 Cup of Olive Oil
  • 1/3 Cup of Chopped Basil Leaves
  • 2 Teaspoons of Salt and Pepper
  • 2 Teaspoons of Italian Seasoning
  • 2 Teaspoons of Onion and Garlic Powder
  • Pasta

Directions

  1. Preheat oven to 400 degrees fahrenheit.
  2. Place cherry tomatoes into an oven safe dish.
  3. Drizzle with half of the olive oil.
  4. Season with salt, pepper, and oregano.
  5. Toss to evenly combine.
  6. Create a space for the block of feta in the middle of the dish.
  7. Pour the remaining olive oil and more seasonings.
  8. Place cloves of garlic on the tomatoes.
  9. Bake for 30-35 minutes or until the feta is comepletely melted and the tomatoes burst.
  10. While baking, boil your pasta according to the instructions on the package.
  11. Once feta is done sprinkle chopped basil on top and mash together the feta and and tomatoes.
  12. Pour noodles into the baking dish and combine everything together.
  13. Enjoy!

Sticky Honey Sriracha Chicken Tenders

Ingredients

*You may need a food scale to measure out these ingredients
  • Sauce Ingredients
  • 50g of Sriracha
  • 50g of Honey
  • 14g of Soy Sauce
  • 14g of Rice Vinegar
  • 4g of Sesame Oil
  • 1 Clove of Minced Garlic

  • Other Ingredients
  • 2 Ibs of Chicken Breast cut into Tenders
  • Sea Salt
  • Black Pepper
  • 40g of AP Flour
  • 10g of Corn starch
  • 100g of Egg Whites
  • 80g of Panko

Directions

  1. Add your sauce ingredients into a box and mix until smooth.
  2. Make 3 plates to coat your chicken(Flour and Corn Starch, Egg Whites, Panko).
  3. Take each tender and coat in flour, egg whites, and then the panko.
  4. Once coated, add to an airfryer and spray with non stick cooking spray.
  5. Air fry on 400 degrees fahrenheit for 10 minutes(Flip at he 6 minute mark).
  6. Once done, toss in sauce.
  7. Enjoy!

Turkey, Avocado, & Cheese Hot Pockets

Ingredients

*You may need a food scale to measure out these ingredients
  • Ingredients for Hot Pocket(makes 1)
  • 2 Slices of Bread
  • 4 oz of Oven Roastd Turkey Breast
  • 14g of 2% Colby Jack Cheese
  • Roasted Red Peppers
  • Pickled Red Onion
  • 14g of Avocado
  • Egg Whites for an Egg Wash

Directions

  1. Roll out your slices of bread as flat as you can.
  2. Brush the inside edges of one of your slices with egg white as to help it stick.
  3. Add your cheese, turkey, roasted red peppers, pickeled red onions, and avocado.
  4. Brush the other slices edges
  5. Add your top slice of bread and press down the edges to help seal the hot pocket.
  6. Brush on more egg whites on the seal of the edge and use a fork for final crimping of the edges
  7. Spray with non stick cookig spray and air fry on 400 degrees fahrenheit for 3-4 minutes or until golden.
